Howard and Caroline Speck, owners of the award winning Highfield Restaurant, appreciate that award winning dining can only be achieved with work from top quality chefs. Highfield has an international team of chefs with a vast experience from the highest quality hotels and restaurants:

Head Chef - Gus brings over 30 years of culinary experience and leadership to the team. Having started his career with a 7 year apprenticeship at one of the North East’s land mark hotels. His career has taken him to some of the UK’s top award winning restaurants and hotels including Michelin Star establishments and one of Scotland’s world famous hotels. Over recent years Gus has been the head chef at some of the Lake Districts award winning hotels & restaurants.

Chef de-partie - Garfield is a qualified chef with over 15 years experience, he trained in Jamaica and has worked in some of the top 5 star hotels on the island, his last post was as Sous Chef in a 5 star hotel in Jamaica, Garfield’s work experience has taken him all over the world as a chef on luxury cruise ships of international fame.

Chef de-partie - Becky a local Cumbrian Girl, who trained at Carlisle College and has worked in 2 other award winning hotels in the Lake District.

Becky joined the team at Highfield in May 2006

Sous Chef - Henri brings a wealth of culinary experience to the team, trained as an apprentice in one of Frances top Michelin Star restaurants. Henri has over 20 years of experience working in some of Europe’s top Michelin Star restaurants and hotels. Most recently Henri has been a chef in some of the award winning hotels in the Lake District.
